Medals up for grabs as London Olympic Games open

Medals are up for grabs in cycling and swimming on Saturday after a spectacular opening ceremony to the London Olympics was watched by more than one billion TV viewers.

The obvious problem with this assessment is that pasta is a traditional food that predates the emergence of the obesity and diabetes pandemics. The truth is, pasta is and has long been a healthy carbohydrate and a central component of the Mediterranean diet, broadly considered one of the best lifestyle diets for maintaining a healthy weight.

How did pasta get such a bad rap? The primary reason is a simple misconception ? that pasta is akin to bread made from wheat. In fact, pasta is made from durum, a wholly different species from bread wheat in that it contains a third fewer chromosomes. Durum is an older species and a hybrid of wild grasses; modern bread wheat is more domesticated.

The second reason why pasta gets criticized is what we tend to do to it: over-process it and top it with salty and fatty goo. This is what has turned inherently healthy pasta into something far less desirable. [10 Bad Things That Are Good for You]

Back to basics

The history of pasta is as long and tangled as poorly cooked linguine. The general consensus is that something like pasta made from semolina, the flour of durum, was eaten throughout the Mediterranean region as early as Roman times.

Pasta as an Italian staple likely developed in the 12th century. Soon after, in the Naples region, the locals developed a way to mass-produce dried pasta, which allowed for long-term storage and indeed helped to enable extended sea voyages.

Pasta has changed little over the last 800 years. In Italy, it was traditionally the food of peasants, which meant just about everyone. Before the introduction of tomatoes from the New World, pasta was served with olive oil, garlic or local vegetables.

Low on glycemic index

What makes pasta healthy is the fact that it has a low glycemic index (GI) ? a modern concept of how fast glucose, a sugar from carbohydrates, is absorbed into the bloodstream. The GI runs from zero to 100, and foods with a higher index number tend to spike the blood with sugar. This taxes the organs ? in particular, the pancreas ? and can lead to diabetes and obesity.

Pasta is remarkably low on the glycemic index. Pasta is around 25 to 45, depending on the type. That's in the range of many fruits and (non-potato) vegetables. Most pasta is in the "low glycemic index" category for the South Beach Diet. That is, pasta is an encouraged food in the South Beach diet, not because it is low-carb, but rather because it is a good carb.

Compare this with two staples of the American diet: white bread, with a GI of about 75; and potatoes, with a GI of about 80. (Mashed potatoes come in at 90.) Did you have corn flakes from breakfast? They have a GI of 80, as do many breakfast cereals.

There are several reasons for pasta's low GI rank, according to Francesco Pant?, director of product development at the Barilla Group in Parma, Italy. Semolina flour comprises large, crystal-like yellow particles. Its naturally strong gluten content prevents starch from leaching out quickly, and this in turn leads to slower digestion, slower release of sugar into the blood, and a greater feeling of satiation, Pant? told LiveScience.

Also, the extrusion process ? in which the unleavened semolina dough is pushed through a die to give pasta its shape ? additionally creates "very compact structure, which makes the carb slowly available [in the body], hence determining a slow energy release," Pant? said.

Researchers continue to confirm the healthful benefits of keeping pasta central to a diet. Pregnant women in the Netherlands who ate a pasta-centric Mediterranean diet gave birth to healthier and higher-weight babies compared with women who ate more meat and potatoes, as reported in February this year in the British Journal of Nutrition.

Researchers in United States found that eating salad with pasta combined to produce a feeling of fullness with fewer calories. Those results were published in February in the journal Appetite. And in the journal Critical Reviews in Food Science and Nutrition in January, researchers in India suggested that bringing more pasta to their country, supplemented with iron and other nutrients, could combat nutritional diseases and undernourishment.

Similarly, multiple recent studies reaffirm that a low-glycemic-load Mediterranean diet leads to healthier blood sugar and cholesterol profiles and lower weight.

If Italy has an obesity problem, it is with its children. The rate of child obesity there mirrors the United States, with about one-third of children overweight. Studies find the reason to be a departure of the traditional diet ? with more meat and ultra-processed foods, such as fast food and prepared foods ? and a lack of exercise.

Pasta, Pant? said, should be cooked al dente, or slightly firm. Anything longer slightly raises the GI. Pasta becomes unhealthy when it is overly processed, such as the mushy stuff in a can, or when it is topped excessively with fatty meats and cheeses.

And pasta should be consumed, as with everything, in moderation, a concept sometimes lost on Americans. Italian portions, although daily, tend to be smaller than American portions. Thus, the Mediterranean diet does make room for those meats and cheeses.

GAZA (Reuters) - Two conversions that a Christian family says were forced have strained relations between a tiny Palestinian Christian community in the Hamas-run Gaza Strip and the Muslim majority.

Hundreds of Christians have staged protests in Gaza's main church in the past week, demanding the return of members of their community of 2,500, whom they said were kidnapped by Islamist proselytizers and forced to convert to Islam.

Christians are blaming the Hamas-affiliated Palestine Scholars Association and its chairman Salem Salama, a senior member of the Islamist Hamas movement.

Hamas has run Gaza since its forces seized control of the coastal enclave in 2007, ousting security services loyal to President Mahmoud Abbas of the secular Fatah movement.

Hamas officials reject the church's accusations, saying two Christians, a man and a woman, converted freely to Islam. The woman, who had left her husband, brought along her three daughters aged 12, 9, and 6 who are now being taught the Koran.

The 24-year-old man told reporters he had become Muslim of his own free will and wanted to go back to his family, should they accept him as a Muslim. A day later, he returned home.

It was not possible to speak to the newly converted woman, Hiba Daoud, but in a video clip made by a pro-Hamas news website she tells her family it was her decision to become a Muslim.

"We are living with a (Muslim) family, they bring us all we need, they teach us how to pray and everything," said Hiba, wearing a full Muslim dress and a scarf covering her hair.

"I love you all, I hope no one feels upset with me, it was my decision which I made months ago."

But her aunt, Fatin Ayyad, says Hiba spoke under duress.

"We are increasingly worried about our sons and daughters. If those people joined Islam of their own will it would not have been a problem. But they were under pressure," she said.

"SPLIT IN RELATIONS"

Only nine Gaza Christians are known to have converted to Islam in the past half-dozen years, an insignificant number. Yet the church and some congregants see the latest conversions as the thin end of the wedge and say they are being targeted.

"There is a big split in relations now," said Ayyad. "Some groups want to spread division between Muslims and Christians."

At the Islamic Scholars office, Salama rejected accusations of forced conversions. He said 11 Christians, including non-Palestinians, had come to his office in the past five months to become Muslim.

"No one is forced to change his religion. This is the instruction of our holy book Koran," said Salama.

Greek Orthodox Archbishop Alexios, who has served the Christian community in Gaza for 12 years, demanded that the Hamas administration help return the woman and her daughters to her home in order to calm tensions.

"We do not want any problem. We want peace and harmony to prevail among us," Alexios told Reuters at the church, located next door to a mosque in downtown Gaza City.

"We are not strangers. Christians did not come from the outside. Christians are part of the Palestinian body and not a strange body," he said at a protest held after the Sunday prayer sermon attended by around 70 worshippers.

Christian-Muslim relations in Gaza are historically far less turbulent than in Egypt, where Copts complain of persecution, or Iraq, where Christians have been targeted for attack.

A Gaza church was bombed in 2009 by al Qaeda-influenced Islamists but since then, Alexios says, churches have been safe. He praised the cooperation of Hamas, but he accused Salama's association of trying to cause friction between the religions.

Hamas security forces have cracked down on radical Islamist cells accused of attacking Christian symbols including a church and a cemetery.

Hamas says it practices a moderate Islam. Palestinian law makes all residents equal before the law regardless of race, gender, color or religion and gives them freedom to practice their religious rituals, without disturbing public order.

In the past five years, two Gaza Christians have been murdered, one by a Muslim friend over a debt, the other in murkier circumstances still not resolved. It was rumored he had been killed by Islamist radicals for trying to convert Muslims.

"BRAINWASHING"

The Christians of Gaza work in almost all professions. Many are doctors and teachers, and some own jewelry stores. Their number dropped to 2,500 from 3,000 before 2007, mostly owing to economic reasons in the enclave, blockaded by Israel.

There are many more Christians among Palestinians of the West Bank, about 52,000 out of a population of 2.5 million, where they have their own Christian schools.

Some of the Palestinian Christians living among Gaza's 1.7 million Muslims are educated in Hamas government schools, some in secular schools run by the United Nations agency UNRWA and some in their own schools. There is no overt discrimination.

Some Gaza Christian families say their children are the target of "brainwashing" attempts by Muslim activists. Daoud's mother said her daughter Hiba was stalked by fellow employees at the Islamic University, who said she needed to become a Muslim.

"My daughter lived in a struggle with them. She did not do this of her own choice," she said.

Alexios said Gaza Muslims and Christians had lived in harmony for 1,600 years. Hamas is not to blame for those now trying to spoil relations, he said, because it wants political contacts with countries of the Christian world.

"It would not benefit them to harm the Christian community here. That's why it has never crossed my mind," Alexios said.

Some Christians now say they would rather leave Gaza than risk losing their children to Islam. But Alexios said they should not act out of fear.

OLPC XO Touch 175 to use Neonode tech, take multitouch on world tour

The One Laptop Per Child's project just got one step closer to updating its venerable XO portable through a newly-struck licensing deal with Neonode. The XO Touch 1.75, a slight rebranding of the as yet unreleased XO 1.75 we saw last year, will use Neonode's MultiSensing to give the laptop a multi-touch screen that's both very responsive and eco-friendly in the same breath. Even as it samples finger input at up to 1GHz, the new OLPC system's 300 DPI display will still use under 2W of power and remain viewable in bright sunlight -- students can even wake up the new model with a gesture instead of using anything so crude as a power button. As important as these advances are to bringing touch to remote schools, we still have some questions about the release schedule and the cost. The XO 1.75 was originally due this year, but we don't know if the Neonode pact will alter the timetable or hike the target price. We've reached out to the OLPC team for comment and will update if there's new details.

She and Jeremy's bunch are as cute as they come.

Before you start thinking we are some crazy family from the south who marrys their cousins...

I promise this is all legit. ?No blood relations at all.

Funny thing though.. My mom is my mother-in-law's mother-in-law.
Yeah go ahead and re-read that again. ?I know you need to.

This also makes my mom my girl's grand maw and great grandma at the same time.

Oh and this makes my girls my great nieces.

This also makes Nick my nephew and?

his mom is technically his sister in law.

My brother is his step-dad...?

I could go on and on.

I know by now I have totally lost you.

So here is a very brief bio to explain it some.
Nick and I got married at a very young age.
His parents divorced that same year.
She then met my brother ( who is quite older than me for the record).
They began to date, fell in love, ?and eventually got married.
And in case you're wondering, no... the entire family was not exactly thrilled.
All of this was before any of us knew Jesus.
It was quite a turbulent season for all of us.
My brother at the time had an addiction to drugs and alcohol and was not exactly great "husband material". ?Our family was dysfunctional in every essence of the word.

Well y'all. ?God showed up and interrupted our lives and began to sweep through our family like a wildfire. ?Two words that stand out during this time is
1. Grace
2. Change

You see until this time...the only ones who knew the Lord in our family were my mom and my step-dad. (my dad passed away when I was 13, my mom eventually remarried and he's a pastor) I have no doubt it was their intercession and prayers for us that were instrumental in us coming to a place of saving grace. (That's a whole post right there!) ?We look back at old videos and see all the drinking and cussing and carrying on and I'm SO ashamed we acted like that around them. ?I asked her years later why they never fussed at us and told us how offensive we were and disrespectful to their position of being the parents.. the "head" our family... ?In her wisdom of knowing the Lord for 41 years now, she said, "Stephanie, there was no need to fight with y'all.. ?I knew the battle was a spiritual one. So we just prayed for y'all."
?She loved us and prayed us right into the Kingdom.

Well, Ms Dianne (my mom-in-law) was the first to get intterputed by Jesus.


And wow let me tell you it not only interrupted her life but all of ours.
I can remember that first Thanksiving after she had first gotten saved. (by saved I mean when she realized she was born a sinner and yielded her life to Jesus and He then redeemed her and saved her from a self-centered life and eternity apart from Him). ?Well, that Thanksgiving she was so different!
And it made me so uncomfortable! ?All she wanted to talk about was Jesus and tell us about her church and she kept smiling and stuff. ?It was a total interruption to our family get togethers....All the drinking and cutting up seemed to stand out that year and for me it was the first time I was confronted with my life full of religion.? I had been brought up in the church all my life and professed to know Jesus but it was at that Thanksgiving that I realized I didn't have what she had. ?At this point, I wasn't even sure I wanted what she had...maybe a little bit of it but definitely not as much of Jesus as her!
?I mean she had become a little "finatical" ?in my book. lol ?Little did I know back then.

You see, now my Mom and Mr. Roy had a partner to join forces with them in battle for our family spiritually in prayer. ?And God honored it y'all. ?Within a month... My brother (the one married to Nick's mom) got saved and set free from all of his addictions! ?Then a few months later, I got saved. ?Then Nick got saved and right around that time.. both of his brothers, Jode and Jeremy got saved. ?It was crazy y'all in an incredible unbelievable kind of way.

And God was SOOO not finished doing His thing in our family....

We all began to grow in the Lord and love His word and then the Lord went and shook things up even more. ?He began dealing with the men in our family....As in calling them to preach.
Now anytime He does this it's a miracle and incredible. ?But y'all. ?If you only knew my family before, you would know this is like "part the Red Sea" kind of incredible.

  • He called my brother first. ?A high school drop-out drug addict to preach His glorious gospel. Pretty awesome huh! ?
  • Then he called my husband. At the time he was one of the shyest people you could ever meet. ?I had never even heard him pray out loud and he's telling me he feels "called" to preach. ?This is a man who had never even read an entire book and now he is eating up his bible every second of the day.
  • Somewhere along the lines...he called Nick's youngest brother, Jode, into ministry and gifted him with crazy talents to lead worship and lead students.?
  • And Nick's other brother, Jeremy is one of the most gifted teachers of the word I know. ?He serves faithfully in many different capacities at his church. He's one of greatest servants I know.

None of these men were brought up in church.
None of them had a godly heritage or foundation.
Their lives are just an example of what God does when He saves a person.?

?Change takes place.

And y'all...my my, how our family has changed.
?Everything about our family has changed.

This was my brother back in the day when drugs was what he lived for.

Now he lives to help others be set free!

(Well he lives for deer season too but that's another story, lol)

This picture was taken when he graduated from New Orleans Theological Seminarry. ?God did that!!

This was taken a few years back at Marvin's church when they were celebrating a new family life center that they had just built and had begun worshipping in.
These are all the men in our family (minus Marcus who we didn't know at the time BUT his family actually played bluegrass at this very celebration!! Lydia now tells us she was scoping him out all day!)
All these men serve the Lord with their lives and lead our families within our homes.
Good googily woogily!! ?God did that!

(AP) ? There is no exhibition game gold medal. The only prize was some player of the game award LeBron James and Carmelo Anthony shared.

Not counting doesn't mean not mattering.

Once U.S. coach Mike Krzyzewski told the U.S. Olympic team that it was playing in probably the biggest basketball game here since the Dream Team ruled Barcelona, the Americans couldn't help wanting to take it to Spain ? even if it may have messed them up in the beginning.

"Today was one of those games that as a team, as a unit, we really tried to lock in from the start," Anthony said. "I think we came out a little bit too focused, a little bit overzealous at the beginning and they jumped on us quick.

"They came out with a lot of intensity and got some easy shots, easy baskets. Once we settled down and made a couple plays defensively, got back to our comfort zone, we didn't look back from there."

Anthony came off the bench to score 23 of his 27 points in the first half, and the Americans beat Spain 100-78 Tuesday night in a rematch of the 2008 Olympic gold-medal game ? and a possible preview of the next one.

James added 25 and Kevin Durant had 13, including 10 in the first 3? minutes of the third quarter to help the U.S. break open the teams' final exhibition game before heading to London.

"We knew that this was a big game," U.S. guard Chris Paul said. "When Coach K talked to us, he told us this was probably the biggest game here in Barcelona since the '92 team was here, so we approached it like that and it was a good win for us."

The teams played a memorable gold-medal game four years ago, the Americans pulling away for a 118-107 victory after leading by only four points with less than 2? minutes left.

This one turned out much easier once the U.S. controlled the final three quarters.

"It was a good test for us tonight, but the exhibition games are over, the friendlies are over and we look forward to the real challenge of going to London," James said.

Pau Gasol scored 19 points and Oklahoma City forward Serge Ibaka, a native of the Republic of Congo who became a Spanish national last year, had 16.

Both teams have been weakened by injuries, with the U.S. missing Dwyane Wade, Dwight Howard and Chris Bosh, all key contributors in Beijing, along with Derrick Rose.

The Spaniards are without point guard Ricky Rubio, and All-Star center Marc Gasol, Juan Carlos Navarro and Rudy Fernandez have battled injuries this year.

They're still the best two teams in the world and favored to meet again in the Aug. 12 gold-medal game. Spain would have a different look, as Marc Gasol was held out of this one while recovering from a left shoulder injury and backup point guard Sergio Rodriguez also sat out.

It may not matter if the Americans play like this in the games that count.

Spain's players said Monday that while they would try to win this tuneup, the bigger priority was preparing for London. The Americans responded that the Spaniards, playing in front of their home fans, would be compelled to go all out in hopes of a victory.

Spain seemed to be playing for real, but was simply overmatched and the Americans eventually ran away for the victory.

"Well, it was definitely a game that we would have loved to play better as a team," Gasol said. "We made too many mistakes which they capitalized and they played their game. They're a quick unit, very athletic and once they were able to convert a few fast-break opportunities due to our turnovers, it was hard for us."

The Americans, who would have had Howard, Bosh and Blake Griffin on this roster, believe their quickness and versatility will overcome their size problems, and that's what happened in this one.

Spain's size advantage was evident early, especially once Tyson Chandler, the only center on the U.S. roster, went to the bench with two quick fouls.

The Spanish pounded the ball inside to Ibaka, who accounted for three straight Spain baskets on dunks, and the Americans were forced to use a timeout ? that never happened 20 years ago when the Dream Team ruled Barcelona ? after Victor Sada's jumper made it 22-13 with 1:40 left in the opening period.

But though Gasol and Ibaka had an obvious advantage inside, neither could deal with Anthony on the perimeter. He made five 3-pointers in the first half while often appearing unguarded behind the arc.

He opened and closed a 20-6 burst with 3-pointers as the Americans went from four down to ahead 42-32 with about 3 minutes left in the half. They later went up by 13 before taking a 48-40 lead into the locker room.

Gasol had the first basket of the second half, but Durant dominated the next few minutes as the Americans extended the lead to 60-46. Russell Westbrook scored seven straight later in the period, his steal and dunk making it 69-48 with 4:19 left.

Spain trimmed it to 12 later in the period, but never had a real shot of getting back into it.

At times it felt like a serious game at Palau Sant Jordi, where nearly every seat was filled well before an energetic pregame ceremony, in which the U.S. national anthem was performed live, instead of the usual recording.

But it also felt like a show, something along the lines of the NBA All-Star game. Navarro was honored before the game for his 200 appearances for Spain, and Dream Teamers Chris Mullin, David Robinson and Clyde Drexler were introduced during a first-quarter timeout. The teams took a photo together after the game as confetti shot out behind them.

The U.S. had a pair of quality tests in Barcelona, beating Argentina 86-80 on Sunday and going 5-0 overall in exhibition play.

But the Americans were pushed by all three opponents with legitimate NBA size, the two here and Brazil in an 80-69 victory in Washington.

"We played against two very tough teams in Argentina and Spain, so I think it made us a better team," Kobe Bryant said. "I think it showed us some things that we want to do differently, some things that we're doing right, and I think because of it we feel pretty good about our chances."

The U.S. and Spain were drawn into opposite Olympic pools, so they wouldn't play until the elimination round. And it's likely to be at the very end of it.

"We know we'll get a different team if we meet them in the Olympics, so this was a one-off game," U.S. guard Deron Williams said. "It doesn't mean anything. It was a good win for us but it doesn't mean anything as far as the Olympics are concerned."

(AP) ? A group of Orthodox rabbis warned Wednesday that the ancient Jewish practice of infant male circumcision could face further restrictions in Europe after some hospitals in Austria and Switzerland suspended the procedure by citing a German court ruling that it could amount to criminal bodily harm.

Last month's verdict by a regional court in Cologne didn't ban circumcision. But it prompted angry protests from Jewish and Muslims groups, especially after the German Medical Association advised doctors not to perform unnecessary circumcisions until the legal situation is clarified ? something Germany's government has pledged to do soon.

Two weeks ago, a hospital in the Swiss city of Zurich also suspended circumcisions, saying it wanted to investigate public concerns about the procedure, which involves cutting off a boy's foreskin. Anti-circumcision campaigners say the act breaches the child's right to bodily integrity, while faith groups insist it is part of their religious freedom.

The Children's Hospital in Zurich said it hopes to reach a decision next month about whether to resume circumcisions. So far, the suspension has delayed only two planned operations, because many Jewish parents prefer to have their sons circumcised privately, Stuecheli said.

The controversial church, which is based in Topeka, Kan., had posted fliers around Columbia in advance of the funeral of?Army Spc. Sterling Wyatt, who was killed July 11 by an improvised explosive device. ??

Protesting at military funerals has become a ritual of Westboro Baptist Church?s, whose members believe that the service members' deaths are punishment for the country's toleration of homosexuality.?Since the early 1990s, the church claims to have held 43,000 demonstrations. They have picketed churches, synagogues, government buildings and funerals of soldiers, celebrities and gay men.

In 2011, the Supreme Court ruled that the protests -- although extremely unpopular -- are protected by the Constitution.?

But some communities, like Columbia, are responding to Westboro's protests in kind -- with counter-protests.?

On Sunday, for example, counter-protesters gathered in Aurora, Colo., to form a human wall around the prayer vigil for the families of 12 people who died in Friday's movie theater shooting, after Westboro Baptist Church threatened to appear.

Westboro didn't go to Aurora, but on Saturday they traveled to Columbia, where red-shirted?residents also formed a human wall for Wyatt?s funeral at First Baptist Church.?

The plan was to surround the church, but the group, numbering in the thousands, spilled into the street and spanned several blocks down the sidewalk.

Westboro gathered down the street from the church. To some community members, the protest was hardly noticeable -- many didn?t even see the protesters, who left around 1 p.m.

?We won,? said 9-year-old Taylor Hewlett, watching his dad, Nathan Rascher, help put a flag away.

?We were doing what?s right,? his dad said, ?and the bad guys went away.?

Many in the crowd said they were simply there to support Wyatt?s family.

Beatrice McKinzie drove about an hour to be there. She didn?t know Wyatt or his family, but several members of her family have been in the military.

?I feel really bad that I never served,? she said.

Every Memorial Day, she lines her yard with 30 evenly spaced flags. On Saturday, she brought four with her ?-- one for each member of the Wyatt family. She had seen a picture of his parents, Randy and Sherry Wyatt, and his brother, Chandler Wyatt, standing by the hearse that bore Wyatt?s body.

?I had to be here,? she said.

Megan Miller, a University of Missouri student, went to Rock Bridge High School with Wyatt. They didn?t spend a lot of time together, but she remembers eating lunch with him sometimes and going to his house once.

?He loved to talk to people, even if they weren?t responsive to him,? she said. And he smiled all the time.

Like Miller, Louie Markovitz went to high school with Wyatt. He didn?t spend much time with his former classmate, but he remembers Wyatt clearly ???-- especially from yearbook photos of the school?s Zombie Defense League, a club Wyatt was part of.

Markovitz, a university student, now works for the local veterans hospital, and he said he has respect for the veterans.

?The military, I don?t necessarily agree with what they do, but I think you should support your soldiers,? he said.

Just before Wyatt?s funeral began, the crowd on the church lawn fell silent -- passing cars were the only sound, though people down the street still spoke. As time for the procession drew near, people started spreading out with a goal of lining the route to the cemetery.

The procession fell silent as the hearse passed by, but it ended with applause.
